Bananalicious Bread

I woke early this morning to make some banana bread. It was a little noisy, with the electric mixer and scrapping the bowl-hope I didn't wake the neighbors! After 10 minutes in the oven, the apartment smelled so divine. I have all of the windows open, including the sliding glass door to the porch-people out walking their dog were complimenting the yummy scent wafting from my apartment. The bread has another half hour before I can take it out of the oven to cool. I can't wait to smear some real butter on a slice of hot, fresh, homemade banana bread. Delicious!

Here is the recipe:

Ingredients: 5 tablespoons butter, 1/2 sugar, 1/2 cup firmly packed light brown sugar, 1 large egg, 2 egg whites, 1 teaspoon of pure vanilla, 1 1/2 cups mashed, very ripe bananas, 1 3/4 cups all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1/4 teaspoon of baking powder, 1/2 cup heavy cream, 1/3 cup chopped walnuts.

Step One:
Preheat oven to 350 degrees. Spray bottom only of 9x5x3-inch loaf pan with nonstick cooking spray.
Step Two:
Beat butter in large bowl with an electric mixer set at medium speed until light and fluffy. Add sugar and brown sugar; beat well. Add egg, egg whites and vanilla; beat until blended. Add mashed banana, and beat on high speed 30 seconds.
Step Tree:
Combine flour, baking soda, salt and baking powder in medium bowl. Add flour mixture to butter mixture alternately with cream, ending with flour mixture. Add walnuts to batter; mix well.
Step Four:
Pour batter evenly into prepared loaf pan. Bake until browned and toothpick inserted near center comes out clean, about 1 hour and 15 minutes.
Step Five:
Cool bread in pan on wire rack 10 minutes. remove bread from pan; cool completely on wire rack. Slice and serve with butter and jam.

Now, this was my first time making this particular recipe and I forgot to add the baking powder! So, don't forget to add all of the ingredients. By the way, after I took the bread out of the oven, it was golden brown~I cooked it a little longer. Taste so good. Oh yes.

Enjoy!
